Who loves chocolate?
I do and I am always on the lookout for healthy chocolate recipes. This one is from Kristin Cosgrove of Kristin Cosgrove cooks
Kristin is one of my favourite food bloggers and has shared her pumpkin and halloumi salad with us before.
She has been kind enough to share one of her recipes from her new book with us today -Dangerously Easy chocolate pudding!
Dangerously Easy Chocolate Pudding
2T organic butter (or coconut oil), melted
2T dutch cocoa powder
1 organic, free range egg
1/4 cup almond meal
tip of the teaspoon of baking powder
pinch of sea salt
What to do:
Preheat the oven to 170C
Mix the melted butter, honey and cocoa together in a bowl. Add the egg and give it a good whisk with a fork.
Add the almond meal and stir well, then add the baking powder and salt and mix well again.
Divide mixture between two ramekins and bake in the oven for about 12-15 minutes. It’s okay if it’s slightly under done (it’s better this way!).
Top with a scoop of homemade vanilla ice-cream, real double cream or even natural yoghurt and some strawberries or raspberries.
Make appropriate ooh and ahh sounds as you devour every last bit!
