This is the first in my Simple and Healthy Family dinner recipes for 2016, there will be more to come!  I have noticed a trend in healthy food bloggers (myself included) to include way more snack and sweet recipes than meals so my recipe focus for the year will be simple and healthy family dinners.

I know meal times can be challenging as a family – fussy eaters, hungry husbands and a mum who is sick of having to think of (let alone cook) another dinner idea that will make everyone happy. So my aim is to provide you with simple, healthy and delicious meal ideas that the whole family will love. Quinoa recipes are always popular, I hope you enjoy this one

Quinoa recipes – Coconut Chicken Quinoa Bowl


2 chicken breast fillets, cubed
1 red onion, sliced
1 zuchini, sliced
coconut oil for cooking
1/2 cup coconut cream
1 t ground cumin
1 t sweet paprika
1/2 t ground cardamon
1 inch ginger, grated
juice of 1/2 lime
dash tamari
1/2 cup quinoa
1 cup coconut cream
1 red capsicum, in long slices
2 carrots, in long slices
2 handfuls spinach
Juice of 1/2 lime
Rinse quinoa well under running water. Put in a pot with 1 cup coconut cream (use as much of the liquid part as possible). Bring to boil and simmer for 10 mins. Turn off.
Mix together the marinade ingredients in a dish, add the chicken pieces and leave to marinade for 1/2 hour or longer. Pan fry chicken in coconut oil and add red onion and zucchini for the last couple of minutes.
Fluff the cooked quinoa with a fork, serve in 4 bowls, top with chicken and veg and serve the raw veg sticking up in the side of the bowl. Squeeze lime over the top.

    Thank you – This looks fantastic! Will definitely try it!!! I would love a few vegetarian/vegan options please!!! I tend to cook dishes like this for my family & then pull the meat out for me. (Gluten free/vegan)

    This is perfect 🙂 I’m doing a week long meal plan of detox friendly dinners (cos I can’t think on my feet with a caffeine comedown!) So this is making top of the list. Might be good as a kinda soup too with and Asian broth added 🙂
