Carrot Cake Bliss Balls
- 3 large carrots
- 8 medjool dates
- 50g dried apricots
- 1 cup oats
- 1 cup walnuts
- 2 cups shredded coconut plus a little more for rolling
- 2 teaspoons mixed spice
- 1/4 cup flaxseeds
- Blitz carrots, dates and dried apricots together in a high speed blender. Remove into a bowl.
- Blitz oats, walnuts coconut, flaxseeds and mixed spice together.
- Mix with the wet ingredients.
- Roll into balls and roll in coconut.
For a nut free version use 2 cups of oats and omit walnuts.
